    This Instant Pot sweet potato chicken chili is an amazing twist on a timeless classic. The hint of sweetness from the potatoes pairs perfectly with the traditional chili spices. Easy to make and perfect for a weeknight dinner. And plenty for leftovers for lunch.

    They say that sweet potatoes have everything you need in them. And they're probably the single most versatile vegetable that I know. I didn't like them much when I was young; that is, unless they were covered in butter and sugar - or baked inside a pie. But things have changed these days. This Instant Pot sweet potato chicken chili is an amazing twist on a timeless classic. The hint of sweetness from the potatoes pairs perfectly with the traditional chili spices. Easy to make and perfect for a weeknight dinner. And plenty for leftovers for lunch.

    How to make Instant Pot Sweet Potato Chicken Chili

    Black beans, kidney beans, pinto beans, and great northern beans in pot.

    First add all 4 types of beans to pot.

    Diced onions and green peppers on top of beans.

    Then add the other veggies – onions, peppers, and garlic.

    Rough chopped sweet potatoes.

    Then add sweet potatoes.

    Spices and herbs on top of chopped sweet potatoes.

    Next add the spices – chili powder, cumin, oregano, bay leaf, and salt.

    Chicken broth and tomato sauce poured over chili vegetables.

    Now, add your liquid components – chicken broth and tomato sauce. Give a good mix.

    Cooked chili with chicken.

    Once cook time is complete, quick-release pressure and remove lid.

    Remove chicken breasts and transfer them to a large mixing bowl.

    Chicken breasts shredded with two forks.

    Using 2 forks, shred chicken into bite-size pieces.

    Shredded chicken on top of chili.

    Return chicken to pot, mix...

    Let sit for as long as you can, but at least 10 minutes.

    Instant Pot Sweet Potato Chicken Chili

    Ingredients

    • 15 oz. canned black beans drained, rinsed
    • 15 oz. canned pinto beans drained, rinsed
    • 15 oz. canned kidney beans drained, rinsed
    • 15 oz. canned great northern beans drained, rinsed
    • 1 cup yellow onions diced
    • 1 cup green bell peppers diced
    • 1 Tbsp. garlic minced
    • 2 lbs. sweet potatoes roughly chopped
    • 2 Tbsp. chili powder
    • 1 tsp. ground cumin
    • 1 tsp. oregano
    • 1 tsp. sea salt
    • 4 cups chicken broth
    • 15 oz. tomato sauce
    • 2 lbs. boneless skinless chicken breasts

    Instructions

    • First add all 4 types of beans to pot. Then add the other veggies – onions, peppers, and garlic. Then add sweet potatoes. Next add the spices – chili powder, cumin, oregano, bay leaf, and salt. Now, add your liquid components – chicken broth and tomato sauce. Give a good mix. Finally, add chicken breasts, and try to submerge in the liquid. 
    • Lock lid and cook for 15 minutes at high pressure. Once cook time is complete, quick-release pressure and remove lid.
    • Remove chicken breasts and transfer them to a large mixing bowl. Using 2 forks, shred chicken into bite-size pieces.
    • Return chicken to pot, mix, and let sit for as long as you can, but at least 10 minutes.

      This was delicious! Will make it a regular meal for my family. The only issue was that the sweet potatoes disintegrated for the most part. But that was okay--it thickened the broth and gave it more flavor. I also added more of all the spices and garlic. Thanks for this recipe.

      Was a wonderful healthy chili. What is the serving size? I know it is 1/12...but was wondering if one serving was a cup or two or something else?

        It should make roughly 12 cups, so each serving will be approximately one cup. 🙂

        I would guess 5-6 hours on low or 3 hours on high.

      I made this once before and it was great! This time I want to leave the house before the 15 minutes are up. Can I just let it natural release and shred the chicken later?

        You can, but I'm pretty sure the sweet potatoes will cook all the way down to mush. They will more than likely become part of the broth. Should still taste good though!

        Dried beans will probably not work here. The other ingredients will be way overcooked.

          I did this with dried beans, and I thought it was fantastic. I added 3 minutes to the cook time (18 minutes total) and let it sit for 15 minutes after it was done. The sweet potatoes became part of the broth, but I thought it was great that way. Maybe I don't have the palate for detecting overcooked, who knows. Either way, I loved it. So thank you!

      This recipe is a keeper! I never follow directions for recipes- I’m a renegade like that. But I followed this one pretty much to a t (I may have snuck a tiny bit more cumin in bc I love it so and I used a poblano because it’s all I had) but dear lord—so good! Everyone (including 3 kids- one who is so picky she often chooses not to eat) loved it!

      This week my husband and I celebrated our 12 year wedding anniversary and today was the first time he ever told me, “Wow!         The recipe was written for a 6-quart, but an 8-quart will also work.
