I must admit... I just learned how easily and perfectly rice cooks when baked in the oven. I was inspired by RecipeTin's Baked Fried Rice to make something that speaks to my southern soul. We all need recipes in our collection that take little time to prepare. And these days, eating meals that don't break the bank has become the norm.
Why This Recipe Works
- The problem I've always had with rice bake dishes is that they usually require you to think the day ahead in planning. Not this one! This recipe uses uncooked rice and is easy enough that anyone can cook this.
- Protein, veggies, and starch in one bowl. That's always a winner in our house; the kids love it!
- This is a great way to use leftover ham. Switching it up from our normal use in split pea soup.
- It is cheap! We feed our family of 5 with this dish for less than $10.
- There's only one dish to clean!

- Can I use canned lima beans? I would not recommend it. Because we are cooking rice, the amount of liquid should not be adjusted,
- Can I use dried lima beans? For this method, no. Dried beans take much longer to cook and would absorb too much liquid.
- Can I use a different size baking dish? Kinda like baking a cake, changing to a different size pan will definitely change the result. I have not tested other pan sizes, so I cannot advise on the result you can expect.
- Can I use brown rice? Yes. For 1 ½ cups of brown rice, use 4 cups of chicken broth, cover, and bake for 1 hour at 400 degrees.

This easy rice bake uses uncooked rice and only one dish! It's an all-in-one complete meal and is a very affordable dinner. It also can be a side dish for pot roast or some other saucy main course.

Ingredients
- 1 ½ tsp. kosher salt
- ½ tsp. ground black pepper
- 1 bay leaf
- 1 Tbsp. red wine vinegar
- 2 cups chicken broth
- 1 ½ cups long grain white rice
- 15 oz. frozen baby lima beans
- 8 oz. diced ham
Instructions
- Preheat the oven to 390. Spray a 13 x 9 baking dish with nonstick cooking oil. Add the salt, pepper, bay leaf, red wine vinegar, and chicken broth and mix to combine.
- Add rice and spread out in an even layer. Then add the baby lima beans in an even layer. Finally top with ham in an even layer.
- Cover the dish with foil and bake for 40 minutes.
- Remove the dish from the oven, uncover, and mix to fluff rice.
