Stovetop Method: In a large pot or Dutch oven, cook the bacon over medium heat until it is almost crispy, about 8 to 10 minutes. Add the onions and cook for about 3 minutes, until soft. Stir in the garlic and cook for 1 more minute, stirring constantly. Pour in the apple cider vinegar and scrape up any browned bits from the bottom of the pot. Add the green beans with their liquid and the potatoes. Season with salt and pepper, then stir to combine. Bring to a low simmer, cover, and cook until the potatoes are tender, about 25 to 30 minutes. Stir once or twice along the way. Remove from the heat as soon as the potatoes are tender.
